This week, we're using a little-known cut of beef known as Jacob's Ladder, or short rib. At this time of year I expect to be chiselling frost off my windscreen and making full use of the heated seats in my car. I love the early commutes over the tops into work, just as the sun is starting to paint the eastern horizon with pale gold, when the freezing skies are clear and cold, showing off the Pennines in glorious ultra-high definition. And just as much as I adore the chilly weather, I love the cooking that we can do when the temperatures drop. Puddings, pies, roasts and casseroles. Stews and soups, curries and biryanis. Dishes that take little time to prepare, but a long time to cook, eking out every bit of flavour with gentle, deliberate heat. I know I am. The ribs are cut from the top of the ribs towards the front of the animal, and are well-covered in a thick later of dense meat and plenty of fat.

Our award—winning pork, bacon and sausage products are all made using superb quality Northern Irish pork. The pork is from pigs selected from our trusted local farmers. We also purchase our own rare breed pigs directly from local farms. All our pigs are carefully reared and humanely slaughtered. After being cured in time-honoured fashion, many of our pork and bacon cuts are finished with a flourish. They spend 10 days in our sugar pit to develop a delicious, sweet cure. This result in a crisp edge surrounding succulent meat, and a delicate balance between sweetness and saltiness. It creates an extraordinary flavour that has charmed some of the most respected palates in the trade. The quality and flavour of our pork and bacon products has been recognised by the several prestigious awards we're proud to have won.
